Enchiladas Verdes 🌿

Growing up, this was my favorite meal my mom would make. So of course, I had to create a healthier version. If you’ve been craving Mexican comfort food, save this recipe!

What you need to make them:
16 sietefoods almond flour tortillas/ or low carb tortillas to make it Keto friendly
2 jars of sietefoods green enchilada sauce
16 ounces of organic shredded mozzarella cheese
1 white onion
1/2 cup cilantro
9×14 Casserole Dish

What to do:
In a large bowl combine about 10 ounces of shredded mozzarella cheese & half of a white onion that has been diced. You can also choose to add shredded chicken, but I did not. Mix the onion & the cheese well.

Next, on a skillet heat each tortilla up for about 20 seconds on each side & set them aside. Then you’ll want pour about 1/3 cup of the enchilada sauce into the casserole dish.

Then begin to roll the enchiladas. Place about 1/4 cup of the cheese & onion mixture down the center of the tortilla & roll them up. Place them seam down in the casserole dish. Continue doing this until each tortilla is filled & the baking dish is completely filled with enchiladas.

Finish by pouring the remaining jar of enchilada sauce all over the tortillas until they are completely smothered in sauce. You’ll want to use about half of the second jar of sauce as well. Then sprinkle the remaining 6 ounces of cheese all over the enchiladas until they are completely covered with cheese. Bake at 350° for about 20 minutes or until cheese is bubbly.

After baking the enchiladas, you can top them with cilantro & additional diced white onions as well as jalapeños! Serve them with a dollop of plain Greek yogurt instead of sour cream for a healthier option!
